We had a big Sunday last weekend, George was baptized and we celebrated Henry’s 2nd Birthday. JJ was a little left out. After church we had lunch over at our house with our family and friends. My brother-in-law, Jeff, is an excellent smoker– of meats — and supplied us with pulled pork for sandwiches. Everything went without a hitch and we had a great time.
The menu was the exact same one as Henry’s baptism combined birthday party we threw last year. If it ain’t broke and this easy, why change it?
Pulled Pork Sandwiches
Fruit Salad
Baked Beans
Asian Cole Slaw
Nestle Toll House Cookie Pie
Everyone always raves about the slaw so here’s the recipe. I don’t remember where it came from either Peggy or Katie.
Ramen Noodle Slaw
Slaw Base:
- 1lb. Regular slaw
- 1 pkg. Beef ramen noodles
- 4-6 green onions-chopped
- Optional–Almonds, sunflower seeds (I use these–yummy!)
Dressing: 1/3 cup vinegar + 1/2 cup oil + 1/2 cup sugar + seasoning pkg from ramen noodles
1. Mix up dressing ahead of time to build flavor.
2. Mix the slaw and onions together, adding the sunflower seeds and ramen noodles just before serving (to add the crunch).
3. Add dressing just before serving.
So easy and good.
Here are a couple more pictures from the day…..
It took Henry about 7 blows to blow out his 3 candles, surprisingly with very minimal spittage.
Aunt Katie put him to sleep in the swing after lunch

I totally noticed the looks on their faces! Totally cute! During Adeena’s baby naming, Eli wanted to be anywhere but near us…
