    margaritaFor the last four years, John has gone on a fishing trip and I throw a girls party.  Its usually the first weekend of May, so this year it was last weekend.  The party is something I look forward to months in advance, because I enjoy it so much!

    I wish I had pictures to share – but I didn’t think about that…next year for sure.

    THE PEOPLE: I love mixing people up at parties and that’s what I look forward to at this one.  The invite list includes friends old and young, neighbors, friends of friends, friend’s moms, people I’d like to know better and girls from church.

    The turnout is always fun and is a yearly reminder of how incredibly blessed I am to have so many amazing women in my life.  When I got married six years ago, I had a hard time coming up with bridesmaids to match John’s groomsmen (7) because I had so few girlfriends.  Thank goodness for my sweet sisters and sister-in-laws that I love or I wouldn’t have come close to matching John’s side!  Girlfriends are something I prayed for a LONG time and He is faithful.

    THE MENU: The first year we did kebabs – they were delicious but way too much time behind the grill for me.  The next year we did a Mexican theme and it was perfect.  We make fajitas and it is all potluck, except I supply the meat and margaritas.

    This year, since I was nauseous and haven’t been able to cook in a couple weeks, Marsha and Amy cooked the meat.  And then as people trickle in, the onions, peppers, sour cream, tortillas,  delicious sides and desserts make their way onto the buffet.  This year, on the Sunday after, I had the forethought to make notes of stuff we needed to tweak for next year.  For example, we always have way to many peppers, tortillas and I get too much tequila.  I don’t know if the latter is a bad thing.

    Because of our time of life, there are always pregnant ladies in the mix – this year me included.  So instead of the normal non-alcoholic beverages, I found the Mamarita.  Which came to be big favorite, almost as big as Amy’s Corn Casserole.   I actually ran out of the ingredients everyone loved it so much.

    I got it from Conceive magazine.  Here it is:

    Mamarita – one serving

    2 tablespoons rimming salt

    1 ounce agave nectar (found at Whole Foods)

    1/2 ounce freshly squeezed lemon juice

    1 ounce orange juice

    3 ounces limeade

    1 lime wedge

    Salt rim of a margarita glass and set aside.  Stir agave nectar and lemon juice in the bottom of mixing glass until nectar dissolves.  Add orange juice, limeade, and ice, then shake vigorously.  Strain into margarita glass, and serve with a lime wedge.

      It was definitely a great party and I’m a little sorry I didn’t try the mamarita, but the tequila was calling.
